Boar Pot Roast
4-5 Lb. Boar Roast
1 onw half cups chopped onion
1 one half cups chopped carrots
1 cup chopped celery
salt and pepper
garlic to taste
2 tablespoons of bacon fat
1 tsp. powdered sage
1 cup red wine
1 tbsp. sugar
Put all the ingredients in your pot, cover with water and cook until tender. Remove vegetables and blend on high. Remove Roast and put on serving plate. Return vegetables to pot and adjust seasonings and thickness. Pour over meat, garnish plate with fresh slice vegetables and serve.
