What is the best way to dry a turkey fan?

I have always used 20 mule team Borax to dry my fans but, can not find it in the stores any more.  What can I use in it's place?

I have used table salt, it takes a little longer but does the trick.

They have some mini-kits available that contain a packet of borax with the kit. Salt works in a non-humid environment but, living in Florida, I've found it doesn't work here with the 85% humidity.
Perhaps you can find a source for borax online .. or bum some off your local taxidermist.

Like the others have mentioned, borax is the most common.  You may also use laundry detergent powder or baking soda as both will draw the moisture out.
